INGREDIENTS 1 packet of The Jack Man BBQ Jackfruit 4-6 Large sweet potatoes scrubbed and cleaned
1 clove of garlic (Optional) Hand full of chopped cilantro 1/2 cup of water (Replace with your choice of yogurt for a thicker consistency) |
METHOD Sweet Potatoes: Preheat the oven to 200 degree C, Poke the sweet potatoes with a fork then wrap them with aluminum foil. Place on a cookie sheet. Bake until tender, 40-60 minutes or longer depending on the size. Jackfruit: Tear open The Jack Man Salsa Jackfruit pouch and empty the contents and cook in the oven at 200 degree C for 10 minutes. Avocado Crème: While the jackfruit and sweet potatoes are finishing cooking, make the avocado crema. In a blender or food processor, add all the ingredients and blend until smooth. Add any additional water/Yogurt as needed. Adjust seasonings desired.
Serve the cooked jackfruit over the baked sweet potatoes and serve with the avocado crema.
