JACKFRUIT WRAP WITH BALCK BEANS AND PINE MANGO SALSA

INGREDIENTS


1 350g packet of The Jack Man Salsa Jackfruit.

Tortilla (medium size) Soft- 3-4

BLACK BEANS
1 tsp oil

1/2 cup onions (Finely chopped)
2 cloves of garlic (Finely chopped)

1 can black beans or 1.5 cups cooked

salt and pepper
1/4 cup of water

PINE/MANGO SALSA

1 Cup of mango (diced)

1 Cup of pineapple (diced)

1 Small red onion (finely chopped) (Caramelize slightly in olive oil for better result)
1 Small tomato (finely diced)

1/4 cup of d bell peppers (finely dice)

Good amount of cilantro (finely chopped)

Small amount of salt and lime/lemon juice

METHOD

Tortilla: Warm either side of the tortilla on a pan for few minutes.

Jackfruit: Tear open The Jack Man Salsa Jackfruit pouch and empty the contents into a frying pan with small amount of oil (optional). Heat for 3-4 minutes while stirring and breaking up to get the pulled look. 

Black beans: Heat oil on a pan, add garlic and onions and cook until translucent (4-5 mins), add water, black beans and seasoning, simmer for 10 minutes.

Pine/Mango salsa: Mix ingredients together gently, adjust seasoning as needed. 

 

Place the tortilla on serving plates. Top with cooked black beans, jackfruit and pine/mango salsa and wrap the tortilla. 

 

Your salsa jackfruit with black beans and pine/mango salsa is ready. Enjoy!
